There's no way of representing it properly in this format, but what you would have to do is to draw the I symbol for one iodine atom with 7 little x's around it and another I symbol with 7 little zeroes around it. Then you would draw a single 'balloon' around one of the x's and one of the zeroes, to indicate that each iodine atom has control not only of its own seven valence electrons, but also of one other electron from the neighbouring iodine atom, i.e. a single bond has formed.
